Make no mistake, Jay and I enjoyed our balls-to-the-wall, pinkies-up experience at Quince, but we also wanted to celebrate in a way more true to our everyday selves. On our actual anniversary, we made a simple homemade dinner and had a quiet night in.
Jay took the lead in the kitchen, breaking in his new cast iron skillet with two gorgeous grass-fed rib-eye steaks. He made the entire meal, from throwing together a custom spice rub to roasting the vegetable accompaniments. The man even uncorked the bottle of wine; all I had to do was light some candles and sit back. Yeah, I know. (Insert Emoji with hearts for eyes here.)
Jay’s steak rub
- 1 tablespoon salt
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 tablespoon paprika
- 1 tablespoon tumeric
- 2 tablespoon ancho chili powder
- 1/2 tablespoon black pepper
Mix all spices together in a small bowl. Rub into meat, distributing evenly. The amount listed makes a large batch — for reference, enough for 6 rib-eye steaks.
